For Canadian top companies, Globe and Mail's ROB (Report on Business) does an annual ranking (similar to Fortune 500 ranking) by certain categories (Market cap, stock performance, profits, employee sizes, etc.) You can start at with

and follow the link.

For Quebec companies, chances are they are the branches of the above, such as the big banks, except some local provincial "crown" firms like Hydro Quebec.
