fresh cream 就象比较稠的奶,有10%,15%,35%三种(如果我没记错的话),whip cream 就是能打成膏状奶油的,象我们吃的生日蛋糕上的鲜奶油,通常是35%的
U 没记错, BUT . . . Is the question of kaylalll on "fresh creme" or "creme fraiche"?
a) If it is "fresh Cream" than answer above.
b) If it's "creme fraiche", completely different animal. "Creme fraiche" = served in France with fruits. It is a "creme aigre", a naturally matured, slightly SOURED-flavored raw cream.
1 cup "creme fraiche" can be substituted with:
- 1 cup raw 30% cream
- 1 tsp. commercial buttermilk
Heat to 85F, let stand at 60-85F till thickened, refrigerate till use. I use Yougurt inestead, too much trouble. |
