If you want to relax, stay at a same resort such as Cayo Coco. You have a 3 year old child, so to go and visit Havana is not a good idea (it's just too warm and tiring for the children; they won't like it). Trip Cayo Coco has more restaurants and offers better food than any other resorts in Cuba, and it is ideal for families. Varadero has the finest beach in the world; try to stand in the water (just metres off the beach) and watch fish swimming around you! If you go to Varadero, try to reserve and go to a "restaurant a la carte" as often as possible, for a buffet type of restaurent often provides the same kind of food every day which you will soon get tired of... Santa Maria is also a nice place, which is just 15 minutes away from Old Havana, but it's mainly for singles, as opposed to families. For a 7-night vacation, I myself would assume two bottles of sun blocking cream, just to avoid getting "burned". In addition to swimming suits, try to take with you at least three sets of fine, casual clothes so that you do not have to wear the same clothes when you go to the restaurents the next time or day.
