You can ask add a feature on your chequeing account in any bank, So every month the bank will return all cancelled cheques to you. The charges is about $2-3 per month.  I use the feature over many years. It is most safe method

By law, the cancelled cheques are legal evidence for all cases. The cheque copy you make before the cheque clearned through the bank is not legal evidence. At court, the judge will ask you to present a legal copy from the bank, that cost you extra $5-6/ copy.
