Blade Roast 便宜，牛肉味比较重，但是韧。我只会炖(stew beef/hungarian goulash/etc.)。你的黑椒汁牛肉条用什么软化牛肉？

it is not easy to find the fondant here. I have to go to Point claire. Do you know any shop carry it in downtown montreal?

Years ago, there used to be 1 or 2 ~wholesales store~=warehouse in Central Market, they might have sold some bulk supplies for small pastry shops. My friend said one of them moved to the West side of Lacadie. I don't know where now. Nice day!
