做蛋糕用的奶油是whipping Cream or Heavy Cream 加糖粉打发的 Both will do. But it depends on recipe.
For cake decoration, people respond wipped Heavy cream lasts longer but I have not encountered an heavy cream (fat content >36) here in montreal.
I have tried whipping cream, whipped cream, nutriwhip or 35% . Nutriwhip did the best job.
It really depends on what do you like. Chesse has different favours, water and fat content. They also have different hardness.
We use Marscaphone cheese to make Tiramisu but people can use cream cheese mix with wipped cream as subsitute.
Some people use ricotta cheese or cottage cheese instead of traditional cream cheese because it has a lower fat content.
