If u roast the whole piece, remember to leave it on the counter for 15 minutes after taking it out from the oven before u cut into it. Else the juice of the meat will run out and it will become dry.
I am not sure if it is 15 or 30 minutes that u are supposed to rest the meat! Please feel free to correct me!
