The best recipe comes from Cornell University, but my book is in storage.
2 recipes copied from The Joy of Cooking:
A. Soy Bean Flour
1 quart Soy Bean Flour (dry ingredient, 1 US quart=1.101 litres )
4 cups water
=> cook/boil + "sieve"
B. Soy Bean
1.5 lbs. dry Soy Bean
==> soak in water for over 12 hours, dump water
==> blend/grind into total of 1 gallon liquid (this amount doesn't matter)
(Liquid, 1 gallon =3.785 litres)
==>TOTAL FINAL PRODUCT = 5 quarts of Soy Milk
(Liquid, 1 US quart=0.9463 litres)
Believe most Chinese said u can re-use the "sieved" soya "mush" to make Soy Milk the second time. Have fun! |
