• Ability to cut fish, meat and vegetables using proper methods
• Properly making sushi rice
• Ability to handle fish and ingredients for sushi preparation
• Ability to make sushi, maki rolls, sashimi, Japanese salad, and soups
• Skillful in controlling supplies, staffing, budgets and costs
• Ability to select fresh and superior ingredients
• Excellent multi-tasking; capable to keep products’ quality under high stress environment
• Maintains cleanliness and hygiene
